Named for Thibaut Pinot, France’s finest cyclist (indisputably), this wine has range and momentum. You’ll find all the classic notes of an ethereal pinot noir (rose petal, strawberries, black pepper) but with an unexpected liveliness and high-toned acidity.

It’s the sort of bottle you’d swiftly empty during a rooftop apéro with friends, or fly home to share with family over the holidays.

vinification & élevage

  • Whole cluster crush into a large egg for around 14 days of maceration with daily (and gentle) pump-overs as needed.

  • Pressed into neutral oak 18hL cask for the remainder of fermentation and élevage, before bottling in september of 2025.
